They tested nearly 350 different knives and steel types, with everyday kitchen tasks like cutting onions, to find a steel that could actually go longer without sharpening.

 

It took four years and 37 different prototypes, but Misen created a knife that will stay sharper longer than any other knife at a similar price, thanks to the Japanese Steel and a noticeably more narrow, 15-degree blade angle.

AUS-10 is a great choice because it has 2.5x more carbon, which gives it both incredible strength and durability. That’s precisely why Misen’s knife needs less sharpening and won’t chip like some made with brittle steels.
