Great Pan

Seasoned up perfectly and is a good replacement for my old cast iron which is heavier and has a much shorter handle. Still use them but not nearly as much as I do the Misen carbon steel pan.

Wish I’d known about carbon steel years ago

I stumbled into these when I wasn’t even looking for cookware. In fact, I came to the site to look at the stainless steel and not intending to get anything. Nearly bought stainless steel once I looked, because my cheap grocery store nonstick pans are nearing their end of usefulness.

I’m so glad I decided to look through the site before I completed my purchase. After seeing these and googling different types of cookware, carbon steel sounded like a better fit for me. Nonstick, and unlike my cheap grocery store pans, these will last a lifetime.

I do fried and scrambled eggs in the 8” and turkey burgers, veggies, and pancakes in the 10”. It was a bit of a learning curve with some googling, but I’m catching on fast and loving these pans! Cleanup is getting easier and easier as the patina builds. I’m still using a bit more cooking oil than I prefer to hedge my bets, but I’m sure I’ll need less and less as the pans become more seasoned. I just did pancakes for the first time today and was so pleased with how easy they were to pick up and turn.

One thing I did notice with the pancakes, though, is that on my gas stove, the center of the pan where the flame hits is hotter than the edges. Not enough difference to be a problem, but something to mention for those who might be bothered. Maybe a bit more preheating would have helped. I sort of jumped the gun on the first pancake. But for me personally, it didn’t effect the final product, so I’m unlikely to wait longer.

10-inch carbon steel pan

Once I got this pan seasoned properly, it is my go-to pan for eggs, omelets. On a glass stove top I had limited success getting the base seasoning layers as recommended. I then used the oven method and the patina really came together, using avocado oil. The pan is virtually non-stick now and will continue to get better. I think this pan requires a bit more maintenance and time to keep in good form compared to the stainless pans but the results are worth it. It came with a few manufacturing blemishes and some scratches incurred during shipping, but those are mostly not noticeable now that the seasoning layer has built up and I expect they will continue to fade. I recommend this pan for people who don't mind spending the time to maintain it. Might not be suitable for those who don't want to make that effort.
