I bought this knife 18 months ago to replace a German knife and I love it. I also own a Japanese 8" chef knife that cost more than my Misen, but I rarely use it now. The Misen is more comfortable to use, is much better with chopping, and even slices better. I'm pretty fussy about my knives and I keep them sharp. The Misen requires much less maintenance than any other knife I've owned. I hone it a few times a week and sharpen it every few months. My other knives really need to be honed after every use and sharpened twice as often. I've used nice German knives too, but I like the Misen better.
