Once you see how it deftly minces the smallest clove of garlic as beautifully as it halves the toughest squash, we know you'll agree. Why The 8 inch Chef's Knife is Great

Japanese AUS-10 Steel: This type of steel has an ultra-high carbon content, which means it stays sharper and holds its edge longer than German steel. Translation? Cutting is easier and safer. And you won’t need to sharpen it as often, so it requires less maintenance than other high end knives.
Sloped bolster: Naturally guides your hand to a comfortable and natural grip. The curved angle of the “heel” of the blade makes it less dangerous too – your fingers are less likely to get cut.
Hybrid blade shape: German knives have a rounded belly, Japanese knives are flat. Ours is the perfect mashup, so it works for any kind of cutting motion – chopping, rocking, drawing, or slicing!
Handle design + material: Wood cracks and breeds germs. Plastic is slippery and doesn’t last. Our handles are crafted from POM, a thermoplastic known for strength and comfort. And the shape is as ergonomic as it is cool looking. Win win.
Rockwell Scale: This is a nerdy steel rating – the ideal range is 58-60. Any lower, and the knife will be soft and inefficient; any higher, the knife can be prone to chipping. Ours is 58. Just right.

Our knife isn’t perfect for everyone. We don’t want anyone to be upset after purchasing our gear. So here are a few reasons to avoid this knife.

We’re also skeptical too of companies that promise the same quality as known brands at half the price. But if you don’t trust us, Google “AUS-10 Steel” and see for yourself. We spent more than over 4 years testing hundreds of knives to build the perfect one at the ideal price. Selling directly means we don’t have to pay big box stores to carry our products. By cutting them out, we can use the same materials and charge 30-50% less!

I’ve never heard of Misen before. Why should I trust you?

We don’t trust websites either. I mean, don’t all of them say their products are incredible? Even if you haven’t heard of us, we’re certainly not new. We’ve been making and selling knives for 10 years. We’re a small but passionate team of pro and home chefs based out of Brooklyn. We started Misen because we love cooking and want to share that joy with anyone and everyone who has to cook. We know good tools make a big difference, but more importantly, you shouldn’t have to pay a lot to get the good stuff. We may be kitchen gear nerds in our souls, but we’re customers who demand great value first and foremost. Give us a try. If you don’t like our knife, just send it back.

Do these knives require special care?

No! We’re pretty busy and designed a knife that actually requires very little care. Because it stays sharp for so long, you really don’t have to do much. Just avoid putting it in the dishwasher and you should be good to go. (But even if you do put it in the dishwasher by accident, don’t worry —- it won’t fall apart).

My new favorite…
This is one very sharp kitchen knife which has excellent ergonomics. Seems to be holding its edge well thus far and is now my new favorite knife in the kitchen. Very, very functional and rivals my Kramer/Zwilling 9” for quality (overall).
