Misen knives are made with AICHI steel, which offers an excellent balance of sharp edge retention and durability and has significantly more carbon content than other “premium” knives.
Our unique sloped bolster pulls double duty: the sloped shape encourages a proper “pinch grip” for comfort and control, while the bolster’s placement creates better access to the full length of the blade.
While most Western-style knives have edge angles of 25 degrees, we use more acute 15 degree angles for a noticeably sharper cutting face.
I love the color of knife handle and the ease of slicing and cutting with knife. The storage of knives in their own separate boxes was a great idea and way to ship!
These knifes are the best!!
I’ve had these knives for about a year and a half now, and I have never sharpened them! They are still sharp enough to slice my fingernail off like butter!!! Highly reccomend them but remember to take care when chopping veggies.
