just what i needed
This knife replaced a boning knife I have been using for years. Misen boning knife is thicker and rigid which makes it easier to debone turkey and chicken. I debone chicken weekly and the job is much easier since it does not flex when making bone splitting cuts. Liked it so much I bought 4 more for my sons and sons-in-laws.

Cutlery in general
I’ve owned numerous sets of cutlery over the years, which I thought were great knife sets. For now, Misen has proved to be the best of all. I started out with a set of chef knives and found them very high quality and tend to hold an edge very well.
When I bought the surf and turf set, I was looking for a butchers knife. Both knives are very high-quality. The boning knife is what I would expect. It tends to be a stiffer blade, I like it because I can surgically work a piece of meat. The surf knife, with the longer, thinner, blade, tends to be a very good, carving knife, it’s very flexible. Both blades hold an edge very well.
