Speak softly and carry a big knife. Or three. This curated set of our strongest, largest, sharpest, and most durable knives, all crafted from Japanese AUS-10 Steel includes:

  • 8 inch Chef's Knife: This rocking workhorse takes on everything from slicing zucchini to separating chicken parts to mincing garlic.
  • 8 inch Santoku Knife: Break out this big guy when you need to do any up and down type of chopping, or when you need to break down a rock-hard butternut squash.
  • 8 inch Serrated Knife: This big shot is great for cutting super soft foods like tomatoes or super hard foods like a crusty boule.

Why The The Big Knives are Great

  • Japanese AUS-10 Steel: This type of steel has an ultra-high carbon content, which means these knives stay sharper and hold their edge longer than German steel. Translation? Cutting is easier and safer. And you won’t need to sharpen them as often.
  • Sloped Bolster: Naturally guides your hand to a comfortable and natural grip. The curved angle of the “heel” of the blade means your fingers are less likely to get cut. 
  • Hybrid Blade Shape: German knives have a rounded belly, Japanese knives are flat. Ours is the perfect mashup and works for any kind of cutting motion – chopping, rocking, drawing, or slicing!
  • Ergonomic Handle + Clean Material: Crafted from POM, a strong thermoplastic. Unlike wood, it won’t crack or harbor germs, and unlike plastic, it’s not slippery and won’t wear out.
  • Wave-Like Serrations: Most serrated knives have sharp, pointy teeth. Ours are designed with slightly rounded tips, so it more gently glides through food with fewer, smoother strokes.
  • Rockwell Scale: The ideal hardness range is 58-60. Any lower, it’s too soft and inefficient; any higher, it’s prone to chipping. Ours rate at 58. Just right.
