5.5 inch Utility Knife Description

When a chef’s knife is too cumbersome, but a paring knife won’t quite get things done, this less common tweener is just right. It’s easier to hold, especially for small hands, and still has that chef’s knife flair. It’s as effective halving a rigid butternut squash as it is mincing basil.   • Japanese Aus10 Steel: Ultra-high carbon content means it’ll stay sharp and hold its edge longer than German steel. This makes cutting easier and way, way safer.

  • Hybrid blade shape: German knives have a rounded belly, Japanese knives are flat. Ours is the perfect mashup. It works for any kind of cutting motion, whether you’re chopping, rocking, drawing, or slicing. 
  • Rockwell Scale: This is a nerdy steel rating – the ideal range is 58-60. Lower, the knife will be soft, hence, inefficient; higher, the knife could be prone to chipping. Ours is 58. Just right.

    Nice addition

    I didn’t know I’d use this knife so much. It’s perfect for a medium onions, four stalks of celery, peppers, garlic, and herbs. So when I’m cooking for myself and/or one or two others it’s great.

    Utility knife.

    I thought I was ordering the paring knife but I ordered the utility knife instead. Although I already have the utility knife, I decided to keep it and ordered the paring knife. You can’t have too many Misen knives. I love them all.
