Carbon (you know, what diamonds are made of) is so strong it creates a knife blade that’s both extremely durable and sharp. The best of both worlds.
Rockwell (HRC) is the scale that measures steel’s strength, specifically its resistance to distortion (a fancy word for “dulling”).
Premium knives should be in 58-61 HRC range. If a knife maker doesn’t disclose the HRC - run. At 58, Misen has the ideal HRC for a strong blade that won’t dull or chip.
