Over $1 Million raised on Kickstarter (Thank You Backers!!!)

An Unbelievable Knife, at an Honest Price.

The Misen Chef’s Knife raised more than $1 million on Kickstarter and has won over cooks of all stripes — from kitchen professionals to passionate home cooks.

Why? We combine innovative design, premium materials, and honest, direct-to-consumer pricing in one ultra-sharp package. If you only buy one great knife in your lifetime, this should be it.

Features

Premium AUS-10 Steel

The Chef’s Knife is made with AICHI AUS-10 steel, which offers an even better balance between lasting sharpness and durability with 2x the carbon content of some other “premium” knives.

Unique Sloped Bolster

Our unique sloped bolster pulls double duty: the sloped shape encourages a proper “pinch grip” for comfort and control, while the bolster’s placement creates better access to the full length of the blade.

15° BLADE ANGLES

While most Western-style knives have edge angles of 25 degrees, we use more acute 15 degree angles for a noticeably sharper cutting face.

The Expensive Knife, Priced Right

You shouldn’t have to choose between quality or fair prices.

We could charge more for this knife, but that would be wrong. We believe in using the best materials possible and selling directly to you at a fair and honest price.

Everything You Need to Know Before You Buy

How long will this knife stay sharp?

It really depends on how often you use the knife, and what items you’re cutting. When tested in the rigors of a professional kitchen, the Misen knife outperformed brands that cost 30-50% more.

However, no knife — including Misen’s — will stay sharp forever. Which is why all our knives come with free sharpening for life. When the blade starts to dull, we’ll have our expert sharpeners bring it back to its original glory for you, free of charge.

Does this knife require special care?

Misen high-end knives are extremely easy to care for. Avoid the dishwasher, wash and dry after use, and you’ll never have an issue with your knife.

What are your blades made from?

We craft our Chef’s Knife with premium Japanese AUS-10 high-carbon stainless steel for two main reasons.

First, it’s a steel that offers an excellent balance between toughness, durability, and razor sharpness.

Second, it has 2x the carbon content of some other “premium” brands, which helps the edge stay noticeably sharper for a longer time.

How can your knife be as good as other high-end knives if it costs so much less?

Most knives cost so much because of traditional retail markups and other fees. You’d be shocked to know how little many well-known “premium” knives actually cost to make.

By partnering closely with our factories and selling directly to you online, we’re able to offer an incredible knife at wholesale pricing with absolutely zero markups. Better materials, lower price.

Does it make sense to buy one knife, and not a set?

The single most important tool in your kitchen is the chef’s knife — it’s the workhorse you reach for most often.

Investing in one great knife now will change your cooking for life.

We actually designed our chef’s knife to replace entire knife sets; with a 15º blade angle and hybrid Japanese/German design, this knife can do 99% of your kitchen cutting.

But if you’re interested in a set, we offer 3- and 5-piece sets including our other knives — including Paring, Serrated, Santoku, and Utility — in addition to the Chef’s Knife.

How does your lifetime warranty and trial work?

We’re 100% confident you’ll love your Misen knife. Confident enough to give you a 60-day in-home trial. If for any reason you're not satisfied, just send it back for a full refund.

Very well made knife, but thin spine.

My tastes run to german knives; tip heavy and lots of steel. Worked professionally as a chef for almost 20 years. This knife was a gift for my brother in law who loves to cook, but doesn't have a decent chefs knife. I chose Misen for both the type of steel & the craftsmanship...doesn't disappoint on either front! My only gripe, and only thing keeping me from switching out my knives to these is the thin blade, especially along the back or spine of the knife. Im just used to heavier blades so just preference really. Any home cook would love this knife, wickedly sharp out of the box too.

Short Chefs knife.

My wife LOVES the short Chefs knife. She has smaller hands and is short. She says she feels safer with the shorter length. LOL Awesome blade. She says that the Utility knife is her new favorite on a second note...
