An Ode to Japanese Steel

Higher-carbon steel for a longer lasting edge.

Japanese AUS-10 steel has higher carbon than German steel, so you can sharpen less often and cut more easily.

Questions?

How long will this knife stay sharp?

It really depends on how often you use the knife, and what items you’re cutting. When tested in the rigors of a professional kitchen, the Misen knife outperformed brands that cost 30-50% more. However, no knife — including Misen’s — will stay sharp forever. When the blade starts to dull, we’ll have our expert sharpeners bring it back to its original glory for you, starting at $11/knife.

Does this knife require special care?

Misen high-end knives are extremely easy to care for. Avoid the dishwasher, wash and dry after use, and you’ll never have an issue with your knife.

What are your blades made from?

We craft our Chef’s Knife with premium Japanese AUS-10 high-carbon stainless steel for two main reasons. First, it’s a steel that offers an excellent balance between toughness, durability, and razor sharpness. Second, it has 2x the carbon content of some other “premium” brands, which helps the edge stay noticeably sharper for a longer time.

How can your knife be as good as other high-end knives if it costs so much less?

Most knives cost so much because of traditional retail markups and other fees. You’d be shocked to know how little many well-known “premium” knives actually cost to make. By partnering closely with our factories and selling directly to you online, we’re able to offer an incredible knife at wholesale pricing with absolutely zero markups. Better materials, lower price.

Does it make sense to buy one knife, and not a set?

The single most important tool in your kitchen is the chef’s knife — it’s the workhorse you reach for most often. Investing in one great knife now will change your cooking for life. We actually designed our chef’s knife to replace entire knife sets; with a 15º blade angle and hybrid Japanese/German design, this knife can do 99% of your kitchen cutting.

But if you’re interested in a set, we offer 3- and 5-piece sets including our other knives — including Paring, Serrated, Santoku, and Utility — in addition to the Chef’s Knife.

How does your warranty and trial work?

We’re 100% confident you’ll love your Misen knife. Confident enough to give you a 60-day in-home trial. If for any reason you’re not satisfied, just send it back for a full refund. All Misen knives come with a lifetime warranty against defects. We will replace any defective knives.

    Very good

I’m not a professional chef, just a retired woman trying to learn to cook better. This is my first misen knife but I love it and would like another one for smaller items.

Why the AUS-10 Knife Chef Is Essential for Everyday Cooking

An 8" chef's knife is the workhorse of any kitchen, and this one is built to handle the bulk of your everyday prep — mincing herbs, breaking down a chicken, or slicing through a butternut squash. The AUS-10 Japanese steel holds an edge longer than typical German steel knives, so you'll spend less time honing and more time cooking, while the hybrid blade shape lets you rock, chop, and slice without switching tools.

If you prefer a slightly smaller, more nimble blade for tighter control, the 6.5" Chef's Knife offers the same steel and grip in a shorter length. For jobs this knife isn't built for — like slicing through crusty bread or ripe tomatoes without crushing them — the serrated knife is a natural companion. And if you're outfitting a kitchen from scratch, the 7-piece knife set rounds things out with specialty blades for boning and paring.

Keep it sharp longer by hand washing and drying immediately after use, and plan on sharpening every 4-6 months depending on how often you cook. With the sloped bolster guiding your grip, it's designed to feel secure and comfortable through hours of prep.
