Very well made knife, but thin spine.
My tastes run to german knives; tip heavy and lots of steel. Worked professionally as a chef for almost 20 years. This knife was a gift for my brother in law who loves to cook, but doesn't have a decent chefs knife. I chose Misen for both the type of steel & the craftsmanship...doesn't disappoint on either front! My only gripe, and only thing keeping me from switching out my knives to these is the thin blade, especially along the back or spine of the knife. Im just used to heavier blades so just preference really. Any home cook would love this knife, wickedly sharp out of the box too.
