Everything You Need to Know Before You Buy

What is “seasoning?” How does it make this pan nonstick?

When talking about pans, “seasoning” refers to layers of polymerized oils that collect to form a nonstick coating, without any added chemicals like Teflon or PFOAs. When you first receive your pan, you’ll remove the protective wax used for shipping, and then alternate heating and oiling it a few times to create this seasoning. Once your seasoning is established, cleanup will be a breeze, and your Misen Carbon Steel requires very little re-seasoning between uses.

What are the best oils or fats to use for seasoning?

We recommend using flavor-neutral oils with high smoke points. Oils like soybean, corn, sunflower, vegetable, and canola are inexpensive, easy to find, and can tolerate higher heat.

How much oil should I apply when seasoning, and after cleaning?

Only a few drops. Your pan should appear dry after oiling, and should not look shiny or reflective. The coating of polymerized oil is microscopic, and not visible to the naked eye. While the overall color of your pan may change, your pan should not look visibly oily.

The carbon steel pan is excellent

I really like how well it distributes the heat from my electric stovetop. See my other review comment about the seasoning wax performance (it is coming off in the center of the pan after three uses. I am washing and drying the pan after use and applying a light coat of cooking oil. Should I just continue using the pan or should I apply more seasoning wax. This is on the 10” pan. I have not treated the 12” pan yet - should I apply more than the four coats of the wax as the instructions direct, or just do the four and use the pan no matter what?

I love the pans

I have always liked cooking with cast iron and have a carbon steel wok so these pans were a no brainer. I did not follow the Misen directions for seasoning choosing the stovetop method because it was much faster. For that once the pan was clean of the shipping oil, I used the wok burner on my stove to bring the steel to a blue. When it was coming up to the blue color I used a kitchen torch to burn any missed oil residue off. It became very obvious if any was missed as it heated up.

Once blue, I let the pan cool until it was below the 453°F smoking point of the soybean oil I was using. Once it was cooled enough, I covered the pan with a coating of oil then used a clean paper towel to remove all the oil I could. Then back on the burner until the pan stopped smoking. Let it cool down again to repeat the process until the pan was sufficiently seasoned. This process took less than an hour to do 5 coats versus the 20+ hour oven method. Luckily for me I have the high BTU burner on the oven.

After seasoning it I sprayed it lightly with canola oil and fried egg. No sticking at all. It also was much easier to flip the egg given the slope of the sides. I could not be happier with the quality, fit and finish of the pans. I highly recommend these. They are a real treat.

Carbon steel pan

Wow, not what I expected at all from add I saw. I haven’t cooked with it yet, but a really heavy pan and you must season it like a cast iron pan. (Not what I bargained for, don’t think I would have ordered it. )

I’ll give it a chance, but would make sure this is what you want.

Would not recommend at this point, I appreciate the positive reviews from others, so I will give it a try.

Good so far.

Had some trouble with seasoning.. Think I did not get it clean enough before seasoning. Have had good success in cooking and it is close to nonstick. Omelet did not stick and bar style burgers worked fine. For the money they are a good value.
