A classic do-it-all pan that’s now even easier to use and care for. Similar to old fashion cast iron — but considerably lighter, this pan is naturally nonstick, oven safe up to 1000 degrees, and will last a lifetime. We pre-seasoned by hand with a natural oil so you can enjoy a nonstick cooking experience right out of the box unlike most carbon steel pans that require you to season before using. And don’t worry about burning your hand! Our cushiony silicon grip is comfortable and heat-resistant. This is a classic pan in most restaurants for it’s versatility, even cooking, and incredible searing powers.

    Misen 10 and 12 inch Carbon steel pans

    Purchased the set as part of the Misen Kickstarter program over a year ago. The 10 inch is used every day, They are well taken care of after using, with a quick scrub ( no soap), wiped down with paper towels and dried and lightly oiled with grape seed oil on the stove top! Love the versatility of stove top to oven, (steaks and salmon). There was a time when the pans were not available after the kickstarter program, I am glad to see that the are now again available for purchase. I am very happy with mine and would highly recommend them.

    Liking it more as I use it

    I was one of the kickstarter backers, so I waited quite a while and had plenty of time for my expectations to harden. I was initially taken aback by the appearance and feel of the preseasoning layer - it feels unpleasantly dry to the touch and does indeed look like cheap nonstick coating - but cooking with it was very nice, and now that I've used it for a few months, I love this pan - it truly is non-stick as long as you're using it properly. If oiled and hot, egg comes off as cleanly as it does off nonstick, but it gives a far better sear for other foods. And it's much lighter and easier to use and clean than my 12" cast iron pan. My only quibble with it is that its sides are shallower than I'd prefer. I wasn't expecting a straight-sided braising pan or anything, but the sides are quite shallow, so I get a fair amount of spatter.

    review of new skillet

    I was surprised at how much heavier it is compared to the one I was replacing. Also, for cooking eggs, it was not the least bit pre-seasoned. It also cooks much hotter than the Misen skillet I was replacing and the heat is not even over the bottom. Big bummer!!
