This classic, do-it-all pan – popular in most restaurants for versatility, even cooking and incredible searing power – is now even easier to use and care for. Like cast-iron, it's oven safe up to 500 degrees and will last a lifetime, but it’s considerably lighter, making it much easier to handle and care for. Our Carbon Steel is pre-seasoned, meaning the pan is good to go right out of the box (unlike many carbon steel pans that require some upfront work). And, like good cast iron, it becomes more "naturally nonstick" the more you use it. Plus, the cushiony, silicone grip is comfy and heat-resistant. As we like to say – cook, don’t get burned!

Three Reasons This Pan Might Not Be For You

We believe in honesty at Misen. We don’t think every product is right for every person. Here’s what you should consider before buying.

You like to let pans soak overnight or only use the dishwasher.

No judgment from us! But carbon steel can’t sit in water or go in the dishwasher or it’ll rust, so if you’re not okay hand-washing this pan, you should steer clear of it.

You already have cast iron you really love.

This pan is pretty similar to cast iron, so if you already have one of those you love then you might not find value in this. However, a lot of cast iron lovers find their way over to carbon steel because it’s so much lighter — eliminating one of the worst aspects of cast iron - it’s weight!

You don’t want to season a pan in the future.

Even though we pre-season the pan so you can use it right away, there is some value to re-seasoning your pan every now and then if it needs it. The process takes about 10 minutes and can be done directly on the stovetop, but we understand not everyone has the time for that.

    Wonderful omelet pan

    Of previously purchased an larger carbon steel frying pan a few years ago but wanted a smaller one for eggs and smaller items. I love that this one came out seasoned unlike my original pan. It was ready to cook on after an initial washing. But, I went ahead and did my usual oven seasoning method and it's just a wonderful addition to my entire collection of Misen cookware and cutlery.

    Unseasoned Carbon Steel

    Purchased this back in 2021, unseasoned, and I seasoned them as per the instructions. I kept hoping they would improve but no improvement after three years of trying. Could never get them to be non-stick and are hard to clean. Maybe the pre-seasoned ones would work better but not sure I want to try at this point.

    Great pan

    I made a bacon, tomato risotto with parmesan cheese. Rice cooked perfectly as did the bacon ( crisped perfectly)!

    Wanted to love it

    Since they haven’t posted my negative review, which is a bad policy to me. This 5 star review is a 2 star review. I loved everything about these pans except that they warp when heated up. With a flat cooking surface this pan warps making the contact surface very small and pretty much useless. I sent them back they didn’t even offer me a replacement. That shows me that it’s a known problem
