12 inch Carbon Steel Wok Description

The wok is a shape honed over centuries to handle most everything a cook needs to do in the kitchen. We added modern tweaks to help it do the rest – it’s got a stay-cool handle, fitted glass lid, and is preseasoned, so it’s ready to roll right out of the box. Searing, sauteing, and steaming. Poaching and boiling. Deep frying. So yes, it’s great for Asian dishes, but also any fried chicken recipe, poached lobster, seared broccoli, even popcorn!

  • Ultra High-Quality, 2.0mm Carbon Steel: Carbon Steel is the best choice for woks because it heats fast and can be seasoned to a nearly nonstick surface over time. It’s not heavy, but it’s got enough heft to stand up to high heats without warping.
  • Pre-Seasoned: Most woks need to be prepped with many rounds of seasoning. We took care of that – with 2 layers of pure corn oil – so you can start cooking as soon as it comes out of the box. Like cast iron, the more you use the wok, the more nonstick the surface becomes.

Everything You Need to Know

Do I need to season it?

Nope — the Misen Carbon Steel Wok is pre-seasoned, so you can start cooking with it right away. We recommend a quick hand-wash with soap and warm water before the first use.

What is “seasoning” and what does “pre-seasoned” mean?

A pan’s “seasoning” refers to the build-up of fats that bake into its metals over time. These layers of fats create a smooth surface that requires very little extra cooking fat to prevent food from sticking. It’s the same thing as a patina on a well-loved cast-iron pan: the more you cook with it, the stronger and more nonstick the pan becomes as it builds up more and more layers of fats.

By pre-seasoning the wok as part of our manufacturing process, we’ve established a strong base layer of seasoning for you. Then, its seasoning will continue to get stronger as you cook with it.

Is it oven-safe?

Yes! This Wok is oven-safe to 500º F / 260º C.

Can I cook high-acid foods in it?

Small amounts of acidic ingredients — like wine or vinegar — are okay to use in the wok.

But we recommend avoiding cooking large amounts of acidic foods (such as tomato sauce) in the wok, as these can cause the buildup of your seasoning to deteriorate.

How do I clean it?

We recommend cleaning with warm water and a non-metallic brush or scrubber. Avoid using soap or the dishwasher, which can cause the seasoning to deteriorate. Towel dry right away to prevent rusting.

My wok isn’t as nonstick as my nonstick pan. Why?

Naturally seasoned carbon steel is a little different from a commercial nonstick coating. It's created by a build-up of fats that bake into the metal, making it more and more nonstick the more you cook with it. We recommend using some cooking fat when you cook with your wok, and it’s always a good idea to properly preheat the pan over medium heat before adding any fat or food.

Does it work on induction cooktops?

Yes, the Wok is made with induction-compatible carbon steel and designed with a flat base that will work on any cooktop: gas, electric, ceramic, you name it.

What kind of fat or oil is used in the pan’s preseasoning?

Our factory uses a blended oil to create our wok’s pre-seasoning. It’s a combination of soybean, rapeseed, sunflower, peanut, rice, corn, sesame, and linseed oil.

My wok isn’t nonstick anymore, what do I do?

The base seasoning layer on the wok is pretty tough, but here’s what to do if it needs a touch-up:

1. Place your clean, dry wok over medium heat for a few minutes to warm up.
2. Use a clean towel or paper towel to rub a few drops of a high-smoke point oil into the wok interior.
3. Continue wiping away the excess oil while it’s over the heat (your wok surface should appear dry, instead of oily or wet)—it may smoke lightly, which is fine! Then remove from the heat and allow it to cool.

    Hot Wok

    This carbon steel wok gets hot in a hurry! I love the natural nonstick feature also. I was a bit concerned that I would burn delicate garlic/ginger, but I adjusted the heat and was able to stir fry all ingredients without burning them.

    I love this pan!

    I purchased this wok because I was taking an Asian cooking class and needed a carbon steel wok. I felt better about buying a USA made product than a China made product, and Misen had a great promotion going on. Boy am I glad I jumped at the offer! I now use this pan more than any other, including cast iron, stainless steel and non-stick pans. It's easy to clean (usually just run it under hot water and dry it), it keeps spattering to a minimum, it's ergonomic to handle, and it allows me to use higher heat that I can on my gas cooktop using other materials. I'm 72 years old, and I just made the best cottage fries/hash browns of my entire life using this wok and olive oil. I have sent several friends your way - I feel that strongly about your products.     The BEST!

    I love this wok for so many reasons. It's the right size, it's not too big or too small. I had another wok that took up my whole undercoutner space - this one is perfect. I have an electric stove and my PREVIOUS wok I had to season, it had a wooden handle which made it impossible to put in the oven. This one has a metal handle (that didn't get too hot at all) and it's awesome I can put it in the oven. Also, the nonstick quality is chef's kiss!! I made tofu right away with a stir fry sauce and I was nervous it would stick, but it fried like a dream and slid around the wok like a dream. I love this!

    This is superior!

    We're still breaking it in, after a couple of weeks, but it performs splendidly. Even heat, great size, and cleans easily. Looking forward to building a nice patina in the finish, through many delicious meals.
