The 3.5" paring knife is built for the small, close-up jobs that a chef's knife handles awkwardly — hulling strawberries, deveining shrimp, peeling apples, or trimming fat from a cutlet. Its compact AUS-10 Japanese steel blade holds an edge well between sharpenings, and the sloped bolster gives you a natural pinch grip that keeps fingers clear of the blade during detailed handheld cuts.
This knife is meant to complement your larger blades, not replace them.
