What Makes Misen Great
Premium AUS-10 Steel
The Paring Knife is made with AICHI AUS-10 steel, which offers an even better balance between lasting sharpness and durability with 2x the carbon content of some other “premium” knives.
Unique Sloped Bolster
Our unique sloped bolster pulls double duty: the sloped shape encourages a proper “pinch grip” for comfort and control, while the bolster’s placement creates better access to the full length of the blade.
15° Blade Angles
While most Western-style knives have edge angles of 25 degrees, we use more acute 15 degree angles for a noticeably sharper cutting face.
I have Misen knives for slicing the big things. But they are not handy for all the small cuts one needs to make in the kitchen. Just a little bit of this or a small cut that a larger knife would overwhelm -- that is what the paring knife is for. The Misen paring knife is the right size, has a good handle and a misen blade for doing all those little tasks extremely well. It works!
I found using the Utility Knife also from Misen to cut small things like cherry tomatoes/plums to be a bit of an overkill so I bought the paring knife along with the serrated knife. This one is so small it's almost kind of cute, but scary sharp right out of the box and cuts everything with ease, definitely loving it.
