What Makes Misen Great

The Misen Short Chef's Knife is made with premium AICHI AUS-10 steel.

Premium AUS-10 Steel

The Chef’s Knife is made with AICHI AUS-10 steel, which offers an even better balance between lasting sharpness and durability with 2x the carbon content of some other “premium” knives.

The sloped bolster on the Misen Short Chef's knife provides more room for your fingers to form a proper "pinch grip".

Our unique sloped bolster pulls double duty: the sloped shape encourages a proper “pinch grip” for comfort and control, while the bolster’s placement creates better access to the full length of the blade.

The Misen Short Chef's Knife is cut at an acute 15 degree edge angle.

While most Western-style knives have edge angles of 25 degrees, we use more acute 15 degree angles for a noticeably sharper cutting face.

How long will this knife stay sharp?

It really depends on how often you use the knife, and what items you’re cutting. When tested in the rigors of a professional kitchen, the Misen knife outperformed brands that cost 30-50% more. However, no knife — including Misen’s — will stay sharp forever. When the blade starts to dull, we’ll have our expert sharpeners bring it back to its original glory for you, starting at $11/knife.

Does this knife require special care?

Misen high-end knives are extremely easy to care for. Avoid the dishwasher, wash and dry after use, and you’ll never have an issue with your knife.

What are your blades made from?

We craft our Chef’s Knife with premium Japanese AUS-10 high-carbon stainless steel for two main reasons. First, it’s a steel that offers an excellent balance between toughness, durability, and razor sharpness. Second, it has 2x the carbon content of some other “premium” brands, which helps the edge stay noticeably sharper for a longer time.

How can your knife be as good as other high-end knives if it costs so much less?

Most knives cost so much because of traditional retail markups and other fees. You’d be shocked to know how little many well-known “premium” knives actually cost to make.     I love the 6.5" Chef Knife, as it is very easy to handle and cut items. I had bought the 8" Chef Knife and like that also, but this is easier for me to utilize. I am very happy with all 3 of my knives that I have gotten through Misen. Thank you!

    Superb design

    Quality is first rate, design is superb. The curve of the edge is just perfect for all around use. However, it is quite large for a 6.5" knife. I would call it a seven-inch length at least (or even slightly more). I don't know how to measure it technically speaking, but it seems to be only a bit shorter than an eight-inch knife I have from another brand.
