Description

Pros will say that if you only own one knife, it should be a chef’s knife. Because it magically minces the smallest clove of garlic as beautifully as it halves the toughest squash. Some of us, especially those with smaller hands, will be much happier with this slightly smaller take, which is a bit easier to control but every bit as effective. It’s a staff fave. So say it with us: "Yes, chef!"

We updated our Blue and Red colors in November 2023 with a more vibrant finish that will give any kitchen a pop of color with a timeless quality.

Why it's great

  • Japanese AUS-10 Steel: We use it because of its ultra-high carbon content. This means it stays sharper and holds its edge longer than German steel – so cutting is easier and way safer. And you won’t need to sharpen it as often, so it requires less maintenance than other high end knives. 
  • Ergonomic, Sloped Bolster: Designed to naturally guide your hand to the most comfortable and safe grip.
  • Hybrid Blade Shape: German knives have a rounded belly, Japanese knives are flat. Ours is the perfect mashup. It works for any kind of cutting motion, whether you’re chopping, rocking, drawing, or slicing. 
  • Sleek, Durable, Comfortable Handle: Wood cracks and breeds germs. Plastic is slippery and doesn’t last. Our handles are crafted from POM, a thermoplastic known for strength and comfort. And the shape is as ergonomic as it is cool looking. Win, win! 
  • Rockwell Scale: This is a nerdy steel rating – the ideal range is 58-60. Lower, the knife will be soft, hence, inefficient; higher, the knife could be prone to chipping. Ours is 58. Just right.

What Makes Misen Great

The Chef’s Knife is made with AICHI AUS-10 steel, which offers an even better balance between lasting sharpness and durability with 2x the carbon content of some other “premium” knives.

The sloped bolster on the Misen Short Chef's knife provides more room for your fingers to form a proper "pinch grip".

Unique Sloped Bolster

Our unique sloped bolster pulls double duty: the sloped shape encourages a proper “pinch grip” for comfort and control, while the bolster’s placement creates better access to the full length of the blade.

The Misen Short Chef's Knife is cut at an acute 15 degree edge angle.

While most Western-style knives have edge angles of 25 degrees, we use more acute 15 degree angles for a noticeably sharper cutting face.

How long will this knife stay sharp?

It really depends on how often you use the knife, and what items you’re cutting. When tested in the rigors of a professional kitchen, the Misen knife outperformed brands that cost 30-50% more. However, no knife — including Misen’s — will stay sharp forever. Which is why all our knives come with free sharpening for life. When the blade starts to dull, we’ll have our expert sharpeners bring it back to its original glory for you, free of charge.

Does this knife require special care?

Misen high-end knives are extremely easy to care for. Avoid the dishwasher, wash and dry after use, and you’ll never have an issue with your knife.

What are your blades made from?

We craft our Chef’s Knife with premium Japanese AUS-10 high-carbon stainless steel for two main reasons. First, it’s a steel that offers an excellent balance between toughness, durability, and razor sharpness. Second, it has 2x the carbon content of some other “premium” brands, which helps the edge stay noticeably sharper for a longer time.

How can your knife be as good as other high-end knives if it costs so much less?

Most knives cost so much because of traditional retail markups and other fees. You’d be shocked to know how little many well-known “premium” knives actually cost to make. By partnering closely with our factories and selling directly to you online, we’re able to offer an incredible knife at wholesale pricing with absolutely zero markups. Better materials, lower price.

Does it make sense to buy one knife, and not a set?

How does your warranty and trial work?

We’re 100% confident you’ll love your Misen knife. Confident enough to give you a 60-day in-home trial. If for any reason you’re not satisfied, just send it back for a full refund. All Misen knives come with a lifetime warranty against defects. We will replace any defective knives.

    Awesome knife and even better customer service

    This knife is fantastic! We broke the tip on our 3 year old knife trying to pry apart frozen meat. I sent a photo of the knife to customer service and a new knife arrived within 4 days! Absolutely have a customer for life!

    I am definitely not an expert. but I really like my new Chef's Knife.

    It is a little smaller than my previous. It is definitely sharper. It cuts tough skins easily and importantly it cuts thru the bottom layer of skin without having to go back and cut again. It seems to be a small pleasure that I perversely enjoy.

    Good tool knife

    This knife is easier to use than a regular chef knife. Not only is it shorter but it's also lighter and easier on the hand when using it to slice and dice veggies and certain cuts of meat. I highly recommend this knife to those who consider themselves culinary artists!
