I cannot find details on the difference between the ridged sides and the smooth sides….what does each side perform function-wise?
The video does not describe the difference and I do not want to damage the beautiful knives I’ve purchased.

The grooved side is used for a deeper hone, bringing duller edges back to life. The smooth sides help grind down any burrs that may appear, leaving you with a clean and sharp edge. (If you notice some gray buildup on the ceramic rod, this is a great sign you are using it correctly).
If your knife is pretty dull, start with the ridged side for 10-15 swipes and then finish on the smooth side for another 10-15. If you do this regularly, skip the grooves, and just touch up on the smooth side.

I'm glad to have a quality honing tool to keep my Misen knives sharp. It worked like a charm on a couple of older knives as well.
Like the flats with grooves and the rounded surfaces. Still getting used to the Handle angle assist. Good length for larger knives.
Wish there was a smaller radius on at least one rounded surface for 'Kullenschliffs' and serrations like my old diamond steel has.
Easy to use and saw/felt an immediate result. I found an older MISEN demo video showing how to achieve the correct angle for the knife while sharpening. I suggest MISEN make it available on their website.
I wish you had it with a black handle to match my knives.
