looks and feels very nice. I have not really been able to carve up some meat with it except one 15# prime rib roast. That was satisfying!

Holds up well
I trim at least a couple of cases of brisket every day, six days a week. The knife holds an edge well. No complaints. Good value.

just what i needed
This knife replaced a boning knife I have been using for years. Misen boning knife is thicker and rigid which makes it easier to debone turkey and chicken. I debone chicken weekly and the job is much easier since it does not flex when making bone splitting cuts. Liked it so much I bought 4 more for my sons and sons-in-laws.
