The 8" Red ACUTO Chef Knife earns its spot as the one knife you reach for constantly, thanks to a hybrid blade shape that rocks through herbs, chops vegetables, and draws cleanly through proteins. AICHI ACUTO440 steel gives it a higher chromium content than typical high-carbon stainless, so it resists rust even after a stint in the sink, while holding an edge at 58±2 HRC for months of hard use before it needs sharpening. The rounded spine and bolster make it comfortable to hold through long prep sessions without hot spots or fatigue.
For finer detail work like trimming herbs or breaking down citrus, the 5.5" Utility Knife makes a natural companion in the same red finish, and a 5" Serrated Knife rounds things out for bread and tomatoes where a straight edge struggles. If you prefer a different look, the same steel and geometry are also available in the black chef's knife.
Care is simple: hand wash, dry right away, and expect to sharpen every 4–6 months rather than every few weeks. Minor discoloration from acidic foods is cosmetic, not rust — a distinction that matters with true high-carbon steel.
