The 8" Blue ACUTO Chef Knife is built to be the one knife you reach for during nearly every cooking session. Its hybrid blade shape moves easily between rocking cuts on herbs, precise slicing through vegetables, and the heavier work of breaking down meat, while the rounded spine and bolster keep the pinch grip comfortable even through long prep sessions.
What sets it apart is the AICHI ACUTO440 steel, a Japanese high-carbon stainless with higher chromium content than typical high-carbon blades. At 58±2 HRC, it holds a sharp edge through heavy use, so you're not sharpening every week, and lab testing shows it resists rust even after repeated dishwasher cycles or long water exposure—though we still recommend hand washing and drying it right away. For finer detail work, it pairs well with the 5.5" Utility Knife, and if you're stocking a full kitchen, the 7-Piece Knife Set covers everything from bread to boning in the same steel.
