The 6.5" Gyuto is Misen's smaller take on a Japanese-style chef's knife, and it earns the workhorse title by being genuinely comfortable to use all day. Because it's shorter and lighter than a full-size chef's knife, it's especially good for cooks who want more control during precise prep tasks.
Made from AICHI ACUTO440 steel, it holds a sharp edge through heavy use and resists rust well enough to survive an overnight soak in the sink, something you'd never risk with a traditional high-carbon blade. If you also do a lot of slicing bread or tomatoes, it pairs naturally with a 5" serrated knife, and for finer detail work many cooks like adding a 5.5" utility knife to the rotation.
