Works Harder, Stays Sharper
A paring knife earns its keep on the small, close-in tasks that a chef's knife handles poorly — hulling strawberries, deveining shrimp, peeling apples, or trimming fat from a cutlet. This 3.5" blade is built from AICHI ACUTO440 steel, the same high-carbon, high-chromium alloy used across Misen's knife lineup, so you get a thin, precise edge that holds its sharpness and resists rust even with frequent, quick use at the sink.
The rounded spine and bolster make it comfortable to hold in a pinch grip for extended prep sessions, which matters more than it sounds like on a knife this small — you're often working close to your fingers. Hand wash and dry it promptly, and expect to sharpen every 4-6 months to keep the edge performing like new.
If you're building out a full lineup, this paring knife pairs naturally with a chef's and utility knife in one of Misen's 3-piece ACUTO440 knife sets, or you can start smaller with the 2-piece knife set if you just need the essentials alongside it. Both options use the same rust-resistant steel and ergonomic handle design.
