Its short blade gives you close control for handheld cuts, and the rounded spine and bolster keep the pinch grip comfortable even during longer prep sessions like coring a bowl of tomatoes.
What sets this paring knife apart is the AICHI ACUTO440 steel, which combines high-carbon sharpness with much better rust resistance than typical stainless. It's been lab-tested to survive 100 dishwasher cycles without corroding, though hand washing and drying it immediately will keep the edge and finish in top shape longest. At 58±2 HRC, it holds an edge through repeated use, so you won't need to sharpen it more than every few months.
