This 3.5" blade is made from AUS-10 Japanese steel, which holds an edge longer than typical German steel thanks to its higher carbon content, so you're not resharpening constantly for delicate work. The sloped bolster gives you a natural pinch grip, which matters most on a knife you'll often use freehand rather than on a cutting board.
