At 58±2 HRC, the steel keeps that edge sharp through repeated use, which matters most with a knife you'll reach for daily.
What sets this one apart from typical serrated knives is the steel itself. AICHI ACUTO440 has a higher chromium content than standard high-carbon stainless, so it's proven rust-resistant even after 100 dishwasher cycles and long soaks — though hand washing and drying it promptly will keep it looking sharp longer. The rounded spine also makes it comfortable to grip during longer prep sessions, like slicing a whole loaf or a batch of tomatoes for canning.
