An 8-inch serrated knife earns its place in the block because it handles what a straight edge can't: crusty loaves, ripe tomatoes, and delicate cakes that would otherwise tear or squash under pressure. The wave-shaped serrations on this blade grip the surface and saw through gently, so you get clean slices instead of crumbs and juice everywhere. It's built from AICHI ACUTO440 steel, the same rust-proof, high-carbon steel used across Misen's line, which means it holds an edge through repeated use and won't corrode even if it sits in the sink for a bit.
If you're building out a full set, this pairs naturally with the 8" Chef's Knife for everyday chopping, or the 5.5" Utility Knife for smaller produce and sandwiches. For those who prefer a compact version for quick bread and fruit tasks, the 5" Serrated Knife is a good complement without the extra reach.
Care is simple: hand wash, dry right away, and plan to sharpen every four to six months to keep the serrations biting cleanly. Some discoloration can appear after contact with acidic foods, which is purely cosmetic and not a sign of rust.
