Are stainless steel pans difficult to care for?

Not at all! Throw them in the dishwasher, let them soak overnight, sear on high-heat — our stainless steel cookware can take anything and truly lasts a lifetime.
Will my pans be nonstick?

Stainless Steel is not nonstick, however, there are ways to make the surface temporarily nonstick before each cooking session.
To do this, heat the pan over medium heat for 2 minutes, add 1 teaspoon of vegetable oil and swirl it around the pan. When you see smoke turn off the heat. Let the pan cool down and wipe out any excess oil. Your pan is now temporarily seasoned and should remain nonstick until you wash it with soap!
Is the cookware induction compatible?

Definitely!
How do I clean stains and discoloration off of the pans?

Use Bar Keeper's Friend, (baking soda will also work!), water, and a lightly abrasive sponge.

    Good pan, not-great handles!

    Overall, I really like this pan; it performs well and it's well-shaped (sides are not too high or low, the flaring is well angled, etc.). The big issue is with the rounded shape of the handle, which is hard to maintain a firm grip on, particularly when doing things like holding the pan up with one hand while scraping it out using a utensil in the other. And if your palms are sweaty or damp from just washing your hands in the sink, it's even worse.

    Instead of that handle design, I'd recommend using the flat handles with removable grips that you used to have on your carbon-steel and nonstick pans. Those grips were fine, and even with them off (I just leave them off all the time so that I can put the pan in the oven anytime), that design is much easier to maintain a solid grip on than the handle on this pan.
