The 4.5-inch blades are ground to 15° per side and made from AICHI ACUTO440, a Japanese high-carbon stainless steel with roughly 18% chromium content — enough to pass lab certification for 100 dishwasher cycles and 50 days submerged in water. At 58±2 HRC, the steel holds a sharp edge well between sharpenings, which Misen recommends only every 4–6 months.
Full-tang construction keeps each knife balanced from tip to heel, and the Polyoxymethylene handles are designed to look at home on a dinner table as much as in a kitchen drawer.
