The 5.5" White Utility ACUTO Knife fills the gap between a full-size chef's knife and a small paring knife, making it the right tool for slicing citrus, trimming small produce, and portioning cheese or charcuterie. Its blade is forged from AICHI ACUTO440, a Japanese high-carbon stainless steel with higher chromium content than typical high-carbon knives, so it resists rust even after long soaks or repeated dishwasher cycles, while still holding a sharp edge at 58±2 HRC. The rounded spine and bolster give it a comfortable pinch grip during longer prep sessions.
If you find yourself reaching for this knife often, it pairs naturally with the 8" Chef's Knife for larger cuts and the 5" Serrated Knife for bread and delicate produce with tougher skins.
