Outstanding pan
I was expecting a carbon steel pan with something like an anodize or patina to it, I was not expecting this thing to be slicker than any cheap Teflon pan I've ever used! This pan sears and builds fond like stainless but fully releases. My first cook was couple of eggs in a dry pan. Preheated on medium a while, cracked them in, amd after only about 30 seconds I gave the handle a shake to try and center the yolks a bit - but the eggs slid around inside the pan like they were ice skating...
This is rapidly becoming a favorite in my collection. And at price point where I can absolutely see myself buying every size. It's not a coating that's going to chip off and with the performance I've come to expect from Misen. Do yourself a favor and buy one!!
