The Benefits of Higher‑Wall Carbon Nonstick Pans
The higher walls on this 10" and 12" set make a real difference once you're cooking anything with volume or moisture — think pan sauces, braised greens, or eggs for a crowd — where a shallower skillet would splatter or spill over. The nitrided carbon steel surface is coating-free, so there's nothing to flake or wear down, and the aluminum core keeps both pans lighter than what you'd expect from carbon steel or cast iron. The included glass lids let you check on food without losing heat, and they're versatile enough to also fit other pans in the Carbon Nonstick collection.
Having both sizes covers most everyday cooking: the 10" is right for a couple of eggs or a single chicken breast, while the 12" handles a full stir-fry or several servings of seared fish. If you already own one size and want to add the other individually, the 12" Deeper Carbon Nonstick pan and 10" Deeper Carbon Nonstick pan are both sold on their own. As with all carbon steel, hand washing and a light coat of oil after each use will keep the surface performing well and building character over time.
