The nitrided carbon steel surface is completely coating-free, so there's nothing to flake or wear off over time, and unlike traditional carbon steel, it needs no lengthy seasoning ritual before you start cooking. The higher side walls on this Deeper profile are especially useful for the 12" pan, which can now handle braises, pan sauces, and stir-fries without splatter or spillover, while the included glass lids let you trap steam for more moisture-retentive cooking.
If you tend to cook mostly solo dishes or smaller portions, the 8" Deeper pan on its own may be all you need, while cooks who want more flexibility across pan sizes might prefer the 8", 10", and 12" three-pan set. For those who don't need lids at all, the 8" + 12" set without glass lids is a lighter-weight, lower-cost option.
Both pans are induction compatible, oven safe to 1100°F, and safe with metal utensils, making them genuinely everyday-use cookware rather than something to baby.
