The 6" Bunka Knife is built around a straight-belly blade with a distinctive triangle tip — a shape borrowed from Japanese kitchen tradition that makes it unusually capable for a compact knife. The pointed tip excels at mincing herbs, trimming proteins, and detail work that a standard chef's knife can feel clumsy doing, while the 5.9" blade still handles broader prep tasks with clean, controlled cuts. The ergonomic rounded spine and bolster reduce fatigue during longer sessions at the cutting board.
What sets this knife apart from most high-carbon options is the AICHI ACUTO440 steel, which carries roughly 18% chromium — significantly more than standard high-carbon stainless. That translates to lab-certified rust resistance through 100 dishwasher cycles and 50 days submerged in water, though hand washing is still the recommended routine. At 58±2 HRC, the edge holds up well between sharpenings, which Misen suggests every 4–6 months.
