An Ode to Japanese Steel

Higher-carbon steel for a longer lasting edge.

Japanese AUS-10 steel has higher carbon than German steel, so you can sharpen less often and cut more easily.

Questions?

How long will this knife stay sharp?

It really depends on how often you use the knife, and what items you're cutting. When tested in the rigors of a professional kitchen, the Misen knife outperformed brands that cost 30-50% more. However, no knife — including Misen's — will stay sharp forever. When the blade starts to dull, we'll have it looking and feeling like new with our mail-in sharpening service.

Does this knife require special care?

Misen high-end knives are extremely easy to care for. Avoid the dishwasher, wash and dry after use, and you'll never have an issue with your knife.

What are your blades made from?

We craft our Chef's Knife with premium Japanese AUS-10 high-carbon stainless steel for two main reasons. First, it's a steel that offers an excellent balance between toughness, durability, and razor sharpness. Second, it has 2x the carbon content of some other "premium" brands, which helps the edge stay sharp longer.

How can your knife be as good as other high-end knives if it costs so much less?

Most knives cost so much because of traditional retail markups and other fees. You'd be shocked to know how little many well-known "premium" knives actually cost to make. By partnering closely with our factories and selling directly to you online, we're able to offer an incredible knife at wholesale prices.

Does it make sense to buy one knife, and not a set?

The single most important tool in your kitchen is the chef's knife — it's the workhorse you reach for most often. Investing in one great knife now will change your cooking for life. We actually designed our chef's knife to replace entire knife sets; with a 15º blade angle and hybrid Japanese/German blade shape, it's incredibly versatile.

    Very good

I’m not a professional chef, just a retired woman trying to learn to cook better. This is my first misen knife but I love it and would like another one for smaller items.

    A Trusted Knife

I would not have bought this if not for the promo deal. Just because I don’t need another knife. This is sturdy reliable chef knife versatile to use for almost anything. Have not used yet but should not disappoint.

    Terrific Knife

This knife is terrific for chopping & a multitude of other uses comes sharp & stays sharp for a long time with much use.

The Benefits of a Japanese AUS‑10/8 3‑Piece Knife Set

This 3-piece set pairs two full-size AUS-10 knives — an 8" chef's knife and an 8" santoku — with a compact 5" serrated knife, covering the most common cutting tasks in a home kitchen. AUS-10 Japanese steel carries roughly twice the carbon content of many competing blades, which translates to a harder edge that holds its sharpness longer between sharpenings. The sloped bolster naturally encourages a pinch grip, giving you better control whether you're rocking through herbs or pulling through a chicken breast.

The santoku's flatter profile excels at thin, precise slices, while the chef's knife handles everything from breaking down vegetables to mincing garlic — together they eliminate the need to reach for a second tool mid-prep. The 5" serrated knife tackles crusty bread, tomatoes, and delicate pastries without tearing. All three feature durable POM handles that resist moisture and bacteria, and Misen recommends hand washing and drying immediately to keep the blades in top condition. Plan on sharpening every four to six months under regular home use.

If you ever want to round out your knife block, the 3.5" Paring Knife pairs naturally with this set for detail work, or consider the 4-Piece Meat Lovers Knife Set if you frequently butcher larger cuts at home.
