How long will this knife stay sharp?

It really depends on how often you use the knife, and what items you're cutting. When tested in the rigors of a professional kitchen, the Misen knife outperformed brands that cost 30-50% more. However, no knife — including Misen's — will stay sharp forever. When the blade starts to dull, we'll have it looking and feeling like new with our mail-in sharpening service.

Does this knife require special care?

Misen high-end knives are extremely easy to care for. Avoid the dishwasher, wash and dry after use, and you'll never have an issue with your knife.

What are your blades made from?

We craft our Chef's Knife with premium Japanese AUS-10 high-carbon stainless steel for two main reasons. First, it's a steel that offers an excellent balance between toughness, durability, and razor sharpness. Second, it has 2x the carbon content of some other "premium" brands, which helps the edge stay sharp longer.

How can your knife be as good as other high-end knives if it costs so much less?

Most knives cost so much because of traditional retail markups and other fees. You'd be shocked to know how little many well-known "premium" knives actually cost to make.     10" serrated knife!

    The first impression was how well balanced it felt. It. is a heavy knife that gives the feeling of handling a sword. I've used it to slice meets, tomatoes and all types of breads and all to satisfaction. I highly recommended it to anyone that spends time in the kitchen.

    Great paring knife, so I bought another!

    Great paring knife. I'm very picky about taking care of my things. My wife doesnt understand that it's not good to leave kitchen tools in a sink full of water overnight, which she does and has been doing for 50 odd years. So, I bought another paring knife that I keep separate. Same with the second 5" serrated knife I bought. They're really nice knives. I still try to watch out for the original knives... but I love my wife and accept her bad habits. I guess it could be a lot worse.

    They were excellent before; on closeout they're a steal!

    The Misen knives, in general, are very well made. The older AUS-10 knives, in particular, are made of a very hard steel alloy, so they keep an edge quite well. (These knives are prone to rusting, though, if not dried immediately after use. The new Accuto-440 knives are supposed to have solved this problem too, but I haven't tried them myself yet.) The paring knives are small, but they're razor sharp. Because of their sharpness and ease of use, I use them for everything I possibly can in the kitchen (unless the item is huge in comparison to the size of the knife). Now that these are on a closeout sale, the price is ridiculously low for a knife of this quality. Besides some larger knives, I've purchased 6 of these paring knives so far!
