Sear, steam, stir-fry, and deep fry. A flat bottom keeps it steady on any cooktop—gas, electric, or induction—and the included glass lid traps steam whenever you need it.

Do I need to season it?

Nope — the Misen Carbon Steel Wok is pre-seasoned, so you can start cooking with it right away. We recommend a quick hand-wash with soap and warm water before the first use.

What is “seasoning” and what does “pre-seasoned” mean?

A pan’s “seasoning” refers to the build-up of fats that bake into its metals over time. These layers of fats create a smooth surface that requires very little extra cooking fat to prevent food from sticking. It’s the same thing as a patina on a well-loved cast-iron pan: the more you cook with it, the stronger and more nonstick the pan becomes as it builds up more and more layers of fats.

By pre-seasoning the wok as part of our manufacturing process, we’ve established a strong base layer of seasoning for you. Then, its seasoning will continue to get stronger as you cook with it.

Is it oven-safe?

Yes! This Wok is oven-safe to 500º F / 260º C.

Can I cook high-acid foods in it?

Small amounts of acidic ingredients — like wine or vinegar — are okay to use in the wok.

But we recommend avoiding cooking large amounts of acidic foods (such as tomato sauce) in the wok, as these can cause the buildup of your seasoning to deteriorate.

How do I clean it?

We recommend cleaning with warm water and a non-metallic brush or scrubber. Avoid using soap or the dishwasher, which can cause the seasoning to deteriorate. Towel dry right away to prevent rusting.

My wok isn’t as nonstick as my nonstick pan. Why?

Naturally seasoned carbon steel is a little different from a commercial nonstick coating. It's created by a build-up of fats that bake into the metal, making it more and more nonstick the more you cook with it. We recommend using some cooking fat when you cook with your wok, and it’s always a good idea to properly preheat the pan over medium heat before adding any fat or food.

Does it work on induction cooktops?

Yes, the Wok is made with induction-compatible carbon steel and designed with a flat base that will work on any cooktop: gas, electric, ceramic, you name it.

What kind of fat or oil is used in the pan’s preseasoning?

Our factory uses a blended oil to create our wok’s pre-seasoning. It’s a combination of soybean, rapeseed, sunflower, peanut, rice, corn, sesame, and linseed oil.

My wok isn’t nonstick anymore, what do I do?

The base seasoning layer on the wok is pretty tough, but here’s what to do if it needs a touch-up:

1. Place your clean, dry wok over medium heat for a few minutes to warm up.
2. Use a clean towel or paper towel to rub a few drops of a high-smoke point oil into the wok interior.
3. Continue wiping away the excess oil while it’s over the heat (your wok surface should appear dry, instead of oily or wet)—it may smoke lightly, which is fine! Then remove from the heat and allow it to cool.

    The Wok I Needed for My Induction Stovetop

    I've cooked with traditional woks and rings on gas stoves for almost 50 years. When I bought a stove with a glass top a few years ago, I really missed the experience of cooking with my wok. Flat sauce pans just didn't give me the same result. Then my favorite OG TV Chef mentioned the Misen nitrided carbon steel pans. I checked out the website — and spotted the flat-bottomed 12" wok.

    I'm in love. This wok can do everything a traditional wok does — and do it all on my induction stove top. I know what I'm giving family and friends as gifts this year!

    So far so good

    Have just used the wok once but so far, so good. Heats up quickly and VERY non-stick! I stir fried some veggies and shrimp and when done could actually just tip the wok and the food slid out. My previous wok was an older “traditional” coated non-stick and was not as slippery. The older wok was a tad bigger so it was a little easier to stir things, but I can make it work - and my guess is if the new wok was any bigger the weight could make it too heavy.

    Wok is good

    Enjoy this product, but I noticed after several stirfry that the small bottom century of the pan has some spots that are not as dark. I was expecting it to just continue to get darker, not have spots that got lighter. Hmmm is this normal and I even olive it after use and this is what it looks like just wiped out after use
