The Utility Knife is made with AICHI AUS-10 steel, which offers an even better balance between lasting sharpness and durability with 2x the carbon content of some other “premium” knives.
Our unique sloped bolster pulls double duty: the sloped shape encourages a proper “pinch grip” for comfort and control, while the bolster’s placement creates better access to the full length of the blade.
While most Western-style knives have edge angles of 25 degrees, we use more acute 15 degree angles for a noticeably sharper cutting face.
This is the perfect size for an all-purpose kitchen knife. My hands are smaller than average and I love it, but my husband has larger than average hands (he’s 6’3”) and he really likes using this knife too!
I bought this for my partner after I bought the chefs knife that was too big for her small hands. This knife works every bit as well as the chefs knife just at a smaller more manageable size for her.
This knife is perfect for slicing a few peppers, mincing some garlic, or trimming some steaks. Perfect size for most of my needs.
