Everything that other reviewers have said is true. Per Misen's instructions, you must heat up the pan first wait about 5 seconds and throw some droplets in the pan and watch them dance. You are ready to put your food in whatever you are cooking. When cooking your food, it really does not stick if you heated it up correctly. I have been using old aluminum and cast iron pans that I used my whole life, never used a steel pan until now. It is very nice and will last the rest of my cooking time. The handle does not get hot which I could not believe. The price is steep but well worth it because it is 5 ply thick and heavy. After washing use a towel and get the water off and store it until next time.
