An Ode to Japanese Steel

Higher-carbon steel for a longer lasting edge.

Japanese AUS-10 steel has higher carbon than German steel, so you can sharpen less often and cut more easily.

Get a Grip

Bolsters that help you hold'em right.

The curved heel guides your fingers into a comfortable pinch grip and away from the blade, making every cut safer.

Questions?

How long will this knife stay sharp?

It really depends on how often you use the knife, and what items you’re cutting. When tested in the rigors of a professional kitchen, the Misen knife outperformed brands that cost 30-50% more. However, no knife — including Misen’s — will stay sharp forever. When the blade starts to dull, we’ll have our expert sharpeners bring it back to its original glory for you, starting at $11/knife.

Does this knife require special care?

Misen high-end knives are extremely easy to care for. Avoid the dishwasher, wash and dry after use, and you’ll never have an issue with your knife.

What are your blades made from?

We craft our Chef’s Knife with premium Japanese AUS-10 high-carbon stainless steel for two main reasons. First, it’s a steel that offers an excellent balance between toughness, durability, and razor sharpness. Second, it has 2x the carbon content of some other “premium” brands, which helps the edge stay noticeably sharper for a longer time.

How can your knife be as good as other high-end knives if it costs so much less?

Most knives cost so much because of traditional retail markups and other fees. You’d be shocked to know how little many well-known “premium” knives actually cost to make. By partnering closely with our factories and selling directly to you online, we’re able to offer an incredible knife at wholesale pricing with absolutely zero markups. Better materials, lower price.

Does it make sense to buy one knife, and not a set?

The single most important tool in your kitchen is the chef’s knife — it’s the workhorse you reach for most often. Investing in one great knife now will change your cooking for life. We actually designed our chef’s knife to replace entire knife sets; with a 15º blade angle and hybrid Japanese/German design, this knife can do 99% of your kitchen cutting.

But if you’re interested in a set, we offer 3- and 5-piece sets including our other knives — including Paring, Serrated, Santoku, and Utility — in addition to the Chef’s Knife.

How does your warranty and trial work?

We’re 100% confident you’ll love your Misen knife. Confident enough to give you a 60-day in-home trial. If for any reason you’re not satisfied, just send it back for a full refund. All Misen knives come with a lifetime warranty against defects. We will replace any defective knives.

    Great product

This knife is very high quality. The size is perfect for all chopping tasks in the kitchen. I have purchased other knives from Misen and they continue to perform well. They are easy to sharpen and retain an excellent edge.

    Highly recommend!

A deal too good to pass up

I have 2 sets of Misen knives because we keep kosher. Was an original Kick Starter purchaser. I have been using these knives for years. Needed a set to use at the Chabad kitchen when I cook there. The deal on the final sale was perfect. Plan on using these for years.

Why the 8" AUS-10 Chef's Knife Is a Kitchen Workhorse

The 8" chef's knife is the most versatile blade in any home kitchen, and Misen's AUS-10 version is built to handle everything from breaking down a whole chicken to slicing delicate herbs. AUS-10 steel offers a strong balance of edge retention and ease of sharpening, so the knife stays sharp through regular use and comes back quickly when it's time to hone or strop. The 8" length gives you enough blade to rock-chop through large vegetables while still feeling manageable for everyday prep.

If you find an 8" blade a touch long for your grip or cutting board, the 6.5" AUS-10 chef's knife covers the same tasks in a slightly more compact form. For a well-rounded knife block, pairing this chef's knife with a 5" serrated knife covers the cuts a straight edge can't — crusty bread, tomatoes, and citrus — without any overlap. This knife is offered in several handle colors, including options like the 8" in black, so it's easy to match your kitchen aesthetic.
