What Makes Misen Great

The Misen Knife Set is made with premium AICHI AUS-10 steel.

Premium Japanese Steel

Misen knives are made with AICHI steel, which offers an excellent balance of sharp edge retention and durability and has significantly more carbon content than other “premium” knives.

The sloped bolsters on the Misen Knife Set provide more room for your fingers to form a proper "pinch grip".

Unique Sloped Bolster

Our unique sloped bolster pulls double duty: the sloped shape encourages a proper “pinch grip” for comfort and control, while the bolster’s placement creates better access to the full length of the blade.

All knives in the Misen Knife Set are cut at an acute 15 degree edge angle.

15° Blade Angles

While most Western-style knives have edge angles of 25 degrees, we use more acute 15 degree angles for a noticeably sharper cutting face.

    Holy smokes

    Honestly, it's a about ergonomics and balance. So many knives can cause joint pain in the cutting hand, particularly the pinkie. This is no good. These knives are both extraordinarily comfortable and, it goes without saying, real sharp.

    Love these knives!
