Higher-carbon steel for a longer lasting edge.

Japanese AUS-10 steel has higher carbon than German steel, so you can sharpen less often and cut more easily.

Questions?

How long will this knife stay sharp?

It really depends on how often you use the knife, and what items you’re cutting. When tested in the rigors of a professional kitchen, the Misen knife outperformed brands that cost 30-50% more. However, no knife — including Misen’s — will stay sharp forever. When the blade starts to dull, we’ll have our expert sharpeners bring it back to its original glory for you, starting at $11/knife.

Does this knife require special care?

Misen high-end knives are extremely easy to care for. Avoid the dishwasher, wash and dry after use, and you’ll never have an issue with your knife.

What are your blades made from?

We craft our Chef’s Knife with premium Japanese AUS-10 high-carbon stainless steel for two main reasons. First, it’s a steel that offers an excellent balance between toughness, durability, and razor sharpness. Second, it has 2x the carbon content of some other “premium” brands, which helps the edge stay noticeably sharper for a longer time.

How can your knife be as good as other high-end knives if it costs so much less?

Most knives cost so much because of traditional retail markups and other fees. You’d be shocked to know how little many well-known “premium” knives actually cost to make. By partnering closely with our factories and selling directly to you online, we’re able to offer an incredible knife at wholesale pricing with absolutely zero markups. Better materials, lower price.

Does it make sense to buy one knife, and not a set?

The single most important tool in your kitchen is the chef’s knife — it’s the workhorse you reach for most often. Investing in one great knife now will change your cooking for life. We actually designed our chef’s knife to replace entire knife sets; with a 15º blade angle and hybrid Japanese/German design, this knife can do 99% of your kitchen cutting.

But if you’re interested in a set, we offer 3- and 5-piece sets including our other knives — including Paring, Serrated, Santoku, and Utility — in addition to the Chef’s Knife.

How does your warranty and trial work?

We’re 100% confident you’ll love your Misen knife. Confident enough to give you a 60-day in-home trial. If for any reason you’re not satisfied, just send it back for a full refund. All Misen knives come with a lifetime warranty against defects. We will replace any defective knives.

    Legacy

I needed a good, serrated knife that would cut through crusty bread easily without warping the bread. This is just what I was looking for.

Why a 5‑Inch White Serrated Knife Is Perfect for Bread and Tomato Slicing

The 5" white serrated knife is built for the everyday jobs a chef's knife struggles with: slicing crusty bread without crushing it, cutting through tomato skin without bruising the flesh, and handling delicate sandwich fillings with clean, even cuts. Its wide-set wave serrations and balanced blade thickness give you a smoother slice than a straight edge, while the compact 5" length makes it easy to control, especially if you have smaller hands or want more precision than a full-size bread knife allows.

The AUS-8 steel takes an edge well and holds it through regular use, and the ergonomic sloped bolster keeps your grip natural and your fingers clear of the blade. If you tend to work with denser artisan loaves or want a bit more reach, the 5" serrated knife in ACUTO440 steel offers a rust-resistant alternative in the same compact size. For slicing beyond bread and tomatoes, pairing this with the 8" chef's knife rounds out a kitchen setup that covers most daily cutting tasks.

Like all Misen knives, this one is easiest to keep sharp with hand washing and immediate drying — skip the dishwasher entirely. If you're building out a full lineup rather than buying pieces individually, the 7-piece knife set is worth a look for covering prep from boning to slicing in one purchase.
