The blade is forged from AICHI AUS-8 Japanese steel, hardened to 58±2 HRC for reliable sharpness and edge retention. The ergonomic sloped bolster encourages a natural pinch grip, and the durable POM handle stays comfortable even through extended use. Hand washing and immediate drying keeps it in top shape; Misen recommends sharpening every four to six months.
